Easy Oven Roasted Vegetables

I don’t know about you, but I don’t gravitate towards eating vegetables. I thought at some point I’d just start eating vegetables as an adult but it turns out that’s not a thing. I did however, recently discover an incredibly delicious way to make vegetables I’m honestly addicted to! I’ve made different variations before but my favorites to mix together are grape tomatoes, yellow squash, zucchini, and red onion. They go great with everything…chicken, pork, steak, whatever and so quick to make!

Here’s the basics…

Easy Oven Roasted Vegetables

1 package grape tomatoes
1 zucchini
1 yellow squash
1 red onion
italian seasoning
salt & pepper
garlic salt (or real garlic if you’re feeling fancy or not trying to save time)
olive oil

Preheat oven to 450 degrees.

Trim and halve zucchini lengthwise; cut crosswise into 3/4 inch thick half moons. Repeat with yellow squash. Slice onions into 3/4 inch slices. Toss zucchini, squash, onions and grape tomatoes on a baking sheet with a large drizzle of oil, salt and pepper, garlic salt and italian seasoning.

Roast until everything is browned and tender, about 20 minutes. Cool and enjoy!
