Peanut Butter Bacon Cookies
Peanut butter bacon cookies… yes you read that correctly, peanut butter BACON cookies. You might think EW, no, those don’t belong together (but yes they do) or maybe you’re a more like-minded person and are now intrigued and excited. Either way, TRY THEM.
They’re easy to make with only six ingredients. Fun to make with kids. They’re both savory AND sweet. I could go on all day but I’ll stop myself. I have been doubted by many and proven them all wrong. Unfortunately, I am not the mastermind behind the cookie, I discovered the recipe here but have since put my own spin on the cookie. Feel free to check out the original recipe, make them my way, experiment with your own version, just promise me you’ll try them.
Here’s the basics…
Peanut Butter Bacon Cookies
1 cup peanut butter (any kind, I like to use chunky)
1/2 cup brown sugar and 1/2 cup granulated sugar
1 egg
1 tsp baking soda
8 slices (or more) bacon ( I prefer turkey bacon)
Cook bacon until fully cooked ( I microwave my turkey bacon) and let cool enough to dice. Set aside.
Preheat oven to 350 degrees.
In a mixer, combine peanut butter, brown sugar and granulated sugar until well combined. Add egg and baking soda and mix well. Fold in cooked bacon. Roll dough into balls and place on a greased cookie sheet. Don’t forget to flatten each cookie with the back of a fork in a crisscross pattern. Peanut butter cookies don’t spread as they cook like most other cookies, so this is an important step. Flattening them helps them cook evenly.
Transfer cookies to oven and bake for about 10 minutes, slightly more or less based on your cookie preference. Let cool and ENJOY!
I’ve changed up the recipe over time so make your own tweaks to the recipe too! Try chunky peanut butter, smooth peanut butter, almond butter, different kinds of bacon, add chocolate chips, go crazy!
